The 825A, featuring a 10"" knife, is suitable for lower-volume needs of operations typically requiring two to three hours daily use and occasional cheese slicing. The 827A, with its 12"" knife and more powerful 1/3 HP motor, is the larger economy model that takes on greater amounts of meats, vegetables or fruits, and a user profile of anywhere from four to five hours daily. It can also handle moderate amounts of cheese. These models? compact design makes them a good choice for operations with limited kitchen space. Heavy gauge aluminum cast housing with anodized finish. Sliding food carriage with 45 degree angle for true gravity feed into blade. Permanent, tapered knife ring guard covers non-slicing portion of knife even when the sharpener and center plate are removed; ring guard design provides more room behind the knife for easy cleaning.
